I've set up an Instiki wiki (with Markdown!) that we can all use for, well, pretty much whatever.

I personally use a wiki on my Palm for this purpose. I use a hack called MegaWiki that allows you to implement a wiki by simply using WikiWords in standard Palm memos.
I find VoodooPad works well for tasks. You can sync its pages to your Palm Memos file with this AppleScript:

This idea can be taken a lot further, e.g. by putting a Wiki on the Palm as well. It's on my Someday list... ;-)
Caveat: I have the script set to nuke all my Palm Memos; I use the Todo app as an inbox on the Palm instead of modifying memos directly. Also; I am not an AppleScript programmer - improvements welcome!

Flat-file at the moment. Soon it will maintain links by exporting to a Palm Wiki, either Acrowiki or pslink/psmemo.
Here's a vote for WikidPad (http://www.wikidpad.org). It's a Windows app, not server based. But in conjunction with something like Webdrive (http://www.webdrive.com) you could store it securely on a remote server.
I'll vote for Pimki - a fork from Instiki with a PIM flavour. If you Google Pimki, you'll see my blog entries about Pimki (on Dangerous Thinking). It's at http://pimki.rubyforge.org/. Assaph Mehr, the developer, is very open to ideas and user input.

Shadow Plan is the best project manager there is for the palm OS.
